Abstract: Research work was carried out to examiner the characteristics of oil produced from white specie of onion obtained in Nigeria. The following functional parameters were examined with therefractive index of 1.34926, density of 1.1036g/cm3, viscosity of 2.45cst, iodine value of 28.1083%, saponification value of 10.94%, free fatty acid (FFA) of 11.264%, peroxide value of 45% and acid value of 2.104%.
