  Abstract: ABSTRACT Quercetin is an anti-oxidant, which very efficiently scavenges highly reactive biological species such as peroxynitrite and hydroxyl radical. Quercetin belongs to the flavonoid’s family. The present studies on optimization of physico-chemical parameters like effects of different solvents, different solvent percentages, particle size, pH and extraction time for the extraction of quercetin was studied.
